Why is it that the wrong thing always feels so right?
I’ve been cooking these gooey chocolate brownies for the
last few years and they are a firm favorite with my “friends”…….described as
filthy and fantastic at the same time (that’s both me and the brownies!)
Fantastic for adult time served a little bit warm with
some Kahlua/butterscotch schnapps whipped cream & rich chocolate sauce
(Hershey’s is a favorite) on the side…..once you’ve finished with the brownie
you just continue with the cream and the chocolate sauce!

Giant Gooey Chewy Chocolate
Brownies
170g/6oz butter, unsalted for
preference plus extra for greasing
280g/10oz caster sugar
200g/7oz soft brown sugar
250g/9oz milk chocolate (Plain
chocolate can also be used)
2tbsp golden syrup (you can
add some more to make it a bit gooier)
4 eggs
2tsp vanilla or chocolate
extract
200g/7oz plain flour
4 tbsp. cocoa powder
1 tsp baking powder
Preheat the oven to 180˚C/
350˚F/gas mark 4. Lightly grease a 20cm/8 inch square baking tin and line the
base with greaseproof or silicone paper
Place the butter, sugars,
chocolate and golden syrup in a heavy based saucepan and heat gently, stirring
until the mixture is well blended and smooth. Remove from the heat and leave to
cool
Beat together the eggs and
choc/vanilla extract. Whisk in the cooled chocolate mixture. Sift together the
flour, cocoa and baking powder and fold
carefully into the egg and chocolate mixture using a metal spoon or palette
knife.
Spoon the cake mixture into
the prepared tin and bake in the oven for about 45 minutes, until the top is
crisp and the edge of the cake is starting to shrink away from the tin. The
inside of the cake will still be gooey and soft to the touch.
Leave the cake to cool
completely in the tin, then cut into squares and serve.
(The recipe can halved to make the
brownies smaller)
To make it a bit more special
Throw in some
chocolate chips, nuts or fruit
(I tend to
throw in a large bag of M&M’s Leave some for decorating the top)
Why not serve with some Kahlua or Butterscotch schnapps
cream?
1 x pot of double cream
1 x tbsp. icing sugar
25ml x Kahlua or butterscotch schnapps
Pour cream into a mixing bowl, add sugar and liqueur and
whisk until soft peaks
ooh - chic lit and chocolate!! - a great combination!!
